This refreshing salad of prawn and rockmelon is lightly drizzled in a lime and mint dressing.

Ingredients
- 400g cooked peeled prawns, tails on
- 1 bunch mint, leaves picked
- 1 bunch coriander, leaves picked
- 1/4 cup lime juice
- 1/4 cup vegetable oil
- 2 teaspoons white sugar
- 1 teaspoon fish sauce
- 1/2 rockmelon, peeled, chopped
Method
Step 1
Place prawns, rockmelon, mint and coriander leaves in a bowl.
Step 2
Whisk together remaining ingredients to make dressing. Pour over salad and toss to combine. Transfer to a large serving plate or bowl.
