This unique combination of smoked trout and watermelon is the perfect summer side salad.

Ingredients
- 350g seedless watermelon, peeled, chopped
- 1 smoked trout (about 300g), bones and skin removed, flaked
- 2 x 100g pkts baby Asian salad leaves
- Handful mint leaves, torn
- Handful basil leaves, torn
- 2 tablespoons sesame seeds, toasted
Lime & sesame dressing
- 1/3 cup (80ml) peanut oil
- 2 tablespoons fresh lime juice
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- 2 teaspoons caster sugar
Method
Step 1
Combine the watermelon, flaked trout, salad leaves, mint and basil in a bowl.
Step 2
To make the dressing, whisk together all the dressing ingredients. 3 Pour the dressing over the salad and toss until combined. Scatter with the sesame seeds to serve.
