Ingredients




  • 500g penne rigate

  • 2 tablespoons olive oil

  • 1 medium red onion, peeled, thinly sliced

  • 2 garlic cloves, crushed

  • 90g (1/2 cup) marinated and quartered artichokes (Rodenas brand), halved

  • 1 425g can tuna (in oil), drained, flaked

  • 1 tablespoon lemon juice

  • Ground black pepper, to taste

  • 1/3 cup roughly chopped fresh Continental parsley

  • Ciabatta bread, sliced, to serve












Method





  • Step 1


    Cook the penne in a large saucepan of salted boiling water, following packet directions, until al dente. Drain and set aside.




  • Step 2


    Heat the olive oil in the same saucepan over medium heat and cook the onion and garlic, stirring occasionally, for 3 minutes or until the onion is soft. Stir in the cooked penne, artichokes, tuna, lemon juice and pepper to taste. Stir over medium heat, for 2-3 minutes or until the tuna is heated through. (See microwave tip.) Stir in the parsley and serve with the ciabatta bread slices.

Notes


Microwave tip: Place olive oil, onion and garlic in a medium heat-resistant microwave-safe bowl. Cook, uncovered, for 1 minute on High/850watts/100% or until soft. Stir in the cooked penne, artichokes, tuna, lemon juice and pepper to taste. Heat, uncovered, for 2-3 minutes on Medium-High/650watts/70% or until the tuna is heated through. gourmet tip: Add 1 tbs drained and rinsed capers with the artichokes. For the kids: Tuna & cheese pasta - leave out the artichokes and add 40g (1/3 cup) grated cheddar cheese just before serving.
