Infused with the flavours of fresh herbs and lemon and serve alongside sweet roasted capsicum, you needn't add a thing to these salmon parcels.

Ingredients




  • 2 cups Roasted capsicum (see related recipe), thinly sliced

  • 1 green onion, thinly sliced

  • 1 garlic clove, thinly sliced

  • 1/2 small lemon, sliced into thin matchsticks

  • 1/3 cup chopped fresh herbs (see note)

  • 2 teaspoons chopped capers

  • 4 (150g) salmon fillets, skin off

  • Steamed chat potatoes, to serve

  • Lemon wedges, to serve








Equipment



  • You’ll need 4 x 30cm pieces foil.






Method





  • Step 1


    Preheat oven to 200°C/180°C fan-forced. Combine capsicum, onion, garlic, lemon, herbs and capers in a bowl. Season with salt and pepper.




  • Step 2


    Lightly grease one side of each piece of foil. Place 1 piece of salmon onto the centre of 1 piece of prepared foil. Top with 1/4 capsicum mixture. Fold up sides of foil and scrunch edges together, leaving a small opening in the top to allow steam to escape. Place onto a baking tray. Repeat with remaining salmon fillets and capsicum mixture.




  • Step 3


    Bake fish for 20 minutes or until cooked to your liking. Stand for 2 minutes. Serve with potatoes and lemon wedges.

Notes


Cooking the salmon in foil infuses it with the flavours of fresh herbs and lemon. We used basil and flat-leaf parsley, but you could also use dill.
