Mouth-watering asian flavours spring to life in this super-healthy and easy tuna steak salad.

Ingredients




  • 40g (1/4 cup) sesame seeds

  • 1 x 125g pkt baby corn, cut in half lengthways

  • 100g snow peas, ends trimmed, thinly sliced lengthways

  • 1 x 250g punnet qukes (Perfection Fresh brand), thinly sliced lengthways

  • 4 (about 180g each, 2.5cm thick) tuna steaks

  • 1 tablespoon olive oil

  • Salt


Lime & wasabi butter sauce



  • 80ml (1/3 cup) fresh lime juice

  • 120g butter, cubed

  • 3 teaspoons wasabi paste












Method





  • Step 1


    Preheat a chargrill over medium-high heat. Place sesame seeds in a small non-stick frying pan over medium heat. Cook, stirring, for 2 minutes or until toasted (see microwave tip 1). Set aside.




  • Step 2


    Cook corn in a saucepan of boiling water for 3 minutes or until tender (see microwave tip 2). Add snow peas (see microwave tip 3) and remove from heat. Refresh under cold water. Drain. Place in a bowl and add qukes. Toss to combine.




  • Step 3


    Brush both sides of the tuna steaks with oil and season with salt. Cook on preheated grill for 2 minutes each side for medium or until cooked to your liking. Remove from heat.




  • Step 4


    Meanwhile, to make the lime and wasabi butter sauce, heat lime juice in a saucepan over low heat. Add butter, 1 cube at a time, whisking until it melts and incorporates before adding the next cube. Continue until all the butter is incorporated. Remove from heat. Whisk in wasabi paste and season with salt.




  • Step 5


    Place cucumber salad on serving plates and drizzle with a little lime and wasabi butter sauce. Top with tuna and drizzle with remaining lime and wasabi butter sauce. Sprinkle with sesame seeds and serve immediately.

Notes


Qukes are sweet baby cucumbers. Microwave tip 1: Place sesame seeds in an oven bag. Twist opening to close. Cook on High/800watts/100%, gently shaking the bag every minute, for 3-4 minutes or until light golden. Microwave tip 2: Wash corn and place in a freezer bag. Twist opening to close. Cook on High/800watts/100% for 1-3 minutes or until tender. Microwave tip 3: Wash snow peas and place in a freezer bag. Twist opening to close. Cook on High/800watts/100% for 1- 1 1/2 minutes or until bright green and tender crisp.
