Crunchy breadcrumbs makes these green beans into a sensational side dish!

Ingredients




  • 80ml (1/3 cup) extra virgin olive oil

  • 40g (about 14) drained anchovy fillets, roughly chopped

  • 3 garlic cloves, cut into thin strips

  • 600g green beans, topped

  • 75g (11/2 cups) fine breadcrumbs from day-old, Italian-style bread

  • Ground black pepper, to taste












Method





  • Step 1


    Heat the oil in a large heavy-based frying pan over medium heat. Add the anchovies and garlic, and cook, stirring frequently, for 4-5 minutes or until the anchovies begin to break down and the garlic is golden.




  • Step 2


    Meanwhile, steam the beans in a steaming basket over a saucepan of simmering water for 4-5 minutes or until they are bright green and tender crisp. (Alternatively, cook in boiling water.)




  • Step 3


    Transfer the beans to a heatproof bowl and add 1 tablespoon of the oil mixture. Toss well to combine. Cover to keep warm and set aside.




  • Step 4


    Heat the remaining oil mixture in the pan over medium-high heat. Add the breadcrumbs and cook, stirring, for 4-5 minutes or until they are crisp and golden brown. Season with pepper.




  • Step 5


    Place the beans on a serving platter and sprinkle with 1/2 the breadcrumb mixture. Place the remaining breadcrumb mixture in a small serving bowl to pass around separately.
