Ingredients




  • 350g pkt Vetta Less-Carbs trevelle pasta

  • 350g (about 2) tuna steaks

  • Olive oil spray

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 200g semi-dried tomatoes, rinsed

  • 1/2 cup roughly chopped continental parsley

  • Salt & freshly ground pepper












Method





  • Step 1


    Cook the pasta in a large saucepan of boiling water until al dente. Drain and return to the pan.




  • Step 2


    Meanwhile, heat a chargrill pan or non-stick frying pan over a high heat. Spray both sides of the tuna with oil and cook for 1-2 minutes each side, or to taste. Remove and set aside.




  • Step 3


    Combine olive oil, lemon juice, tomatoes and parsley. Season with salt and pepper.




  • Step 4


    Break the tuna into large pieces and toss through pasta with the tomato mixture. Serve immediately.
