Ingredients
- 350g pkt Vetta Less-Carbs trevelle pasta
- 350g (about 2) tuna steaks
- Olive oil spray
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 200g semi-dried tomatoes, rinsed
- 1/2 cup roughly chopped continental parsley
- Salt & freshly ground pepper
Method
Step 1
Cook the pasta in a large saucepan of boiling water until al dente. Drain and return to the pan.
Step 2
Meanwhile, heat a chargrill pan or non-stick frying pan over a high heat. Spray both sides of the tuna with oil and cook for 1-2 minutes each side, or to taste. Remove and set aside.
Step 3
Combine olive oil, lemon juice, tomatoes and parsley. Season with salt and pepper.
Step 4
Break the tuna into large pieces and toss through pasta with the tomato mixture. Serve immediately.
