Ingredients
- 400g angel hair pasta
- 2 tablespoons olive oil
- 1 red onion, roughly chopped
- 2 garlic cloves, crushed
- 2 teaspoons finely grated lemon rind
- 1/2 cup whole green olives
- 2 tablespoons lemon juice
- 3 x cans smoked tuna slices in oil, drained
- 1/3 cup chopped flat-leaf parsley
- salt and cracked black pepper
Method
Step 1
Cook the pasta in a large saucepan of salted boiling water according to packet instructions or until al dente. Drain and keep warm.
Step 2
Meanwhile, heat the oil in a large non-stick frying pan over medium heat. Add the onion and cook for 4 minutes or until softened. Add the garlic and lemon rind and cook for another 1-2 minutes.
Step 3
Add the cooked pasta to the pan, along with the olives, lemon juice, tuna and parsley. Season with salt and cracked black pepper.
Step 4
Gently toss until well combined and cook for another 2-3 minutes or until warmed through. Divide between serving bowls and serve with shaved parmesan and a simple salad.
Notes
If you can't find smoked tuna slices, use two cans of regular tuna in oil or tinned red salmon. For special occasions, try using smoked salmon or trout.
