A perfect combination of smoked salmon, fennel and creamy cheese. This tasty salad will impress guests and have you going back for seconds.

Ingredients
- 200g South Cape spring onion and chive cream cheese
- 1/3 cup Coles extra virgin olive oil
- 1 small bulb fennel, trimmed, tough outer layers removed, shaved
- 50g baby spinach leaves
- 100g smoked salmon, cut into strips
- 1 pane toscano ciabatta roll, thinly sliced, lightly toasted
- Lime wedges, to serve
Method
Step 1
Roll cream cheese, one teaspoonful at a time, into balls and place in a small bowl. Top with olive oil.
Step 2
Combine fennel and spinach and divide between individual serving bowls. Top with a little smoked salmon and two cheese balls. Drizzle over a little of the oil from the cheese bowl and serve with ciabatta and a lime wedge.
