A perfect combination of smoked salmon, fennel and creamy cheese. This tasty salad will impress guests and have you going back for seconds.

Ingredients




  • 200g South Cape spring onion and chive cream cheese

  • 1/3 cup Coles extra virgin olive oil

  • 1 small bulb fennel, trimmed, tough outer layers removed, shaved

  • 50g baby spinach leaves

  • 100g smoked salmon, cut into strips

  • 1 pane toscano ciabatta roll, thinly sliced, lightly toasted

  • Lime wedges, to serve












Method





  • Step 1


    Roll cream cheese, one teaspoonful at a time, into balls and place in a small bowl. Top with olive oil.




  • Step 2


    Combine fennel and spinach and divide between individual serving bowls. Top with a little smoked salmon and two cheese balls. Drizzle over a little of the oil from the cheese bowl and serve with ciabatta and a lime wedge.
