Give potato salad a gourmet twist by adding smoked salmon and dill.

Ingredients




  • 750g washed small potatoes, halved

  • 125mls (1/2 cup) sour cream

  • 2 tablespoons white wine vinegar

  • 1/2 teaspoon dill seeds

  • 4 slices (about 80g) smoked salmon, cut into 5 mm-wide strips

  • 2 tablespoons chopped fresh chives

  • Salt & ground black pepper, to taste












Method





  • Step 1


    Cook the potatoes in a large saucepan of salted boiling water for 15 minutes or until just tender. Drain and set aside for 10 minutes to cool slightly.




  • Step 2


    Toss the potatoes, sour cream, vinegar and dill seeds in a bowl until well combined. Gently fold through the smoked salmon and chives and season well with salt and pepper.
