Ingredients
- 12 oysters, in half shell
- 8 (about 150g) thin slices mild pancetta, excess fat trimmed, coarsely chopped
- 80ml (1/3 cup) balsamic vinegar
Method
Step 1
Preheat grill on high.
Step 2
Place oysters on a baking tray. Top each with the chopped pancetta and then drizzle evenly with the balsamic vinegar.
Step 3
Place under preheated grill (about 5cm away from the heat source) and cook for 10 minutes or until pancetta is crisp. Serve immediately.
