Ingredients




  • 250g red fish fillets

  • 500g green prawns, peeled and deveined

  • 2 1/2 tablespoons red curry paste, or to taste

  • 2 teaspoons grated fresh ginger

  • 1 lime, juiced

  • 1 egg

  • 300mls thickened cream

  • 2 tablespoons roughly chopped fresh coriander leaves

  • Lime wedges, to serve

  • 12-18 cooked pappadums, to serve












Method





  • Step 1


    Preheat oven to 180°C. Place fish fillets and prawns into a food processor bowl and process until smooth.




  • Step 2


    Add the red curry paste, ginger, lime juice, egg and cream, and process until well combined. Stir in coriander.




  • Step 3


    Spoon into a lightly greased 500ml (2 cup) ovenproof dish. Place dish in a roasting pan and pour enough warm water into the roasting pan to reach a quarter of the way up the sides of the dish.




  • Step 4


    Bake in preheated oven for 20-25 minutes or until pate is golden and just firm. Serve warm with lime wedges and pappadums.
