Succulent prawns served with fresh avocado is a classic retro salad favourite.

Ingredients
- 3 tablespoons good quality mayonnaise
- 1 orange, rind finely grated
- 60mls (1/4 cup) fresh orange juice
- 2 ripe avocados
- 12 (about 400g) medium prawns, shelled with tails left intact
- 1/4 bunch fresh chives, cut into 2.5cm lengths
- Salt & ground black pepper, to taste
Method
Step 1
Combine the mayonnaise and orange rind and juice in a small bowl.
Step 2
Halve, deseed and peel the avocados. Cut each avocado half lengthways into thirds.
Step 3
Place three avocado pieces on each serving plate, top with 3 prawns and pour over the dressing. Sprinkle with the chives and salt and pepper.
